Pesto Dip

• 1 block cream cheese
• Shredded Parmesan cheese
• ½ - 1 container Pesto (I prefer Buitoni Pesto with Basil)
• Small jar of chopped roasted red peppers, drained
• Shredded sharp cheddar cheese

Directions
Combine cream cheese and parmesan in microwaveable/oven safe dish (this is the first layer of the dip). Next spread a layer of the pesto on top of the cream cheese layer. Spread red peppers on top of pesto layer. Then top with cheddar cheese. Either bake or microwave until bubbly. I typically serve this dip with Reduced Fat Triscuits.
